14. Vegetarian Mulligatawny Soup

This is one of my favorite soup recipes. You can always use canned tomatoes instead of fresh and a whole can of coconut milk to make it creamier and thicker.

Serving Size: 6

Cooking Time: 45 minutes

Ingredients:

1 medium onion, chopped

4 cups vegetable stock

1 stalk celery, chopped

1 medium carrot, chopped

2 tablespoons lemon juice or lime juice, fresh

1 teaspoon turmeric

1 tomato, chopped

½ cup unsweetened coconut, grated

1 tablespoon coriander
